This interesting vegetable is a new addition to Portland Organic Gardens this year. A few have gotten away from us and the CSA Members have received some large crowns! Generally a much sweeter, tender veggie when picked at 2 – 4″ across. Patty Pan are a great source of Vit. A & C.
Beautiful Crown Shaped Squash
Also referred to as Scalloped Squash, Sunburst, Button and White Squash this spherical squash is part of the summer squash family, these cuties are about as versatile as veggies come! Keep it simple and steam whole for 4 – 6 minutes, test with a fork and eat as is, or cover with cheese & your favorite dressing for a little excitement! As with any summer squash variety they are also great roasted and sauteed, add some butter and garlic and toss with fresh pasta. Do not over cook these tender little vittles, once a fork slides in easily, they are done (4 -6 min. depending on thickness) Check out the recipe section for more great ideas!
The name “pattypan” derives from “a pan for baking a patty.” Wikipedia notes its French name, “pâtisson,” derives from a Provençal word for a cake made in a scalloped mould. Easy to grow and quite prolific this squash is a great alternative to spice up the regular summer squash routine. These are definitely a favorite here at Portland Organic Gardens and many varieties will be added to our grow list indefinitely!
